What's your signature cocktail, and how does it represent your personal style behind the bar?
My signature cocktail is the “Grand Cru Spritz”, a refined yet contemporary creation that embodies my approach to hospitality: elegant, balanced, and deeply rooted in both tradition and innovation. The Grand Cru Spritz cocktail is built on a foundation of Axia and Cygnet Welsh Gin, which is a unique blend of resinous, herbal and botanical characteristics. The addition of Aperol provides a subtle bitterness, while elderflower and grape cordial adds sweetness and floral notes to the drink. To enhance its structure, citrus blend was added to ensure balance and brightness, while the sparkling wine and soda adds sharpness and crisp clean finish.
This cocktail reflects my philosophy behind the bar: precision, depth and storytelling. With over 12 years of experience in the industry, I’ve learned that the best cocktails are not just well-crafted but also tell a story - whether through their ingredients, their inspiration, or the experience they create for the guests.
The Grand Cru Spritz came to life through a collaborative brainstorming process with the bar Operational Manager, Theo Konstantopolos whose insights helped shape the final composition.
As a female mixologist, what challenges have you faced and how have you overcome them?
As a female bartender, I have faced my share of challenges such as breaking stereotypes and proving my expertise in a male dominated industry. Rather than seeing these as obstacles, I used them as motivation to refine my craft, build confidence, and let my work speak for itself. Through dedication and pure passion for the job, I have been lucky to work within an inclusive team where talent transcends gender.
What's one piece of advice you'd give to women looking to break into the drinks industry?
Work hard, keep pushing your limits, and never settle. Challenge yourself to learn and evolve every day. Surround yourself with those who inspire you, and seek mentors who uplift you, set high standards, and ultimately, aim to become the best version of yourself. When an opportunity arises, pay it forward by empowering the next generation of mixologists in the industry.
