Jenny Briani for Axia | Trailblazing women redefining the drinks industry
This International Women’s Day, Axia is shining a spotlight on the trailblazing women redefining the drinks industry. Throughout March, we’re showcasing female mixologists and industry leaders across London, New York, and Athens—women who bring creativity, expertise, and a bold perspective to their craft.
Through a series of Q&As, we’re sharing their journeys, inspirations, and impact, offering a glimpse into the passion and talent shaping the future of the cocktail making industry. Follow along as we celebrate those who push boundaries and step beyond the ordinary.
What's your signature cocktail, and how does it represent your personal style behind the bar?
I would go for a Mastiha Fizz. I use Axia with a fresh citrus juice – like grapefruit – with a splash of soda. I love working with Axia because the herbal, resinous and slightly citrusy notes allow for endless creativity. But the drinks are always clean and sophisticated.
I believe that the best cocktails are seemingly simple to make, yet full of character once you taste them. What makes a drink great is the story behind it – and with Axia, I get to bring the spirit of Mastiha and that tradition into every glass.

As a female mixologist, what challenges have you faced and how have you overcome them?
The drinks industry has come a long way, but like many women in hospitality, I've had to prove my expertise in ways my male counterparts haven't. Early on, I encountered moments where my knowledge or skill were questioned – not because of my inability, but because of assumptions about my gender. I focused on education, confidence, and mentorship to overcome this. I made sure to stay ahead by continuously learning and pushing creative boundaries. Representation matters and every time I step behind the bar as an ambassador, I hope to show that skill, passion, and creativity knows no gender.

What's one piece of advice you'd give to women looking to break into the drinks industry?
Own your space and never be afraid to take up more of it. The industry needs more women in leadership, behind the bar and in ambassador roles. Stay curious, keep refining your craft, and surround yourself with like-minded people who lift you up. Also, don't just learn how to make drinks but learn why they work. Understanding balance, technique, and flavour will set you apart. And, of course, support other women – we rise only when we rise together.
