Axia Recipes: Mastiha Tree Dessert

Signature Mastiha Tree Dessert

Elements:

1. Green grapes compressed with Axia lemon syrup

2. Calamansi lime & white chocolate ganache montee

3. Thinly Sliced frozen green grapes

4. Apple mint, lime and green apple granita

5. Green apple meringue

6. Axia & apple caviar

7. Elderflower

8. Green tree tuile

9. Apple mint, lemon, green apple, Axia Jus

Recipes & Method

1. Axia lemon syrup
100g Lemon juice
100g Axia
100g Caster sugar

Heat all of them up in a pot  then simmer it for 8-10 minutes. Cool down.

Wash green grapes and compress it with Axia lemon syrup in a vacuum bag.

Let it infuse for at least 1-2 days in the fridge.

2. 480g Double cream
1 sheet Bronze gelatine leaf, soaked in ice water
175g good quality white chocolate
85g Boiron Calamansi lime puree (replaceable with lemon or lime juice)

Heat up double cream and add soaked gelatine. Pour it over chocolate and mix well with calamansi puree. Refrigerate overnight, whip it the next day.

3. Wash and slice green grapes and place over baking paper. Freeze

4. 45g  Water
35g Caster sugar
50g Dextrose powder
8g Apple mint
45g Fresh lime juice
500g Boiron green apple puree

Boil water, sugar and dextrose powder until all is well dissolved. Cool down.

Blend it with the rest of ingredients and freeze for an hour in a blast chiller on a gastro pan.( or overnight in a normal freezer) Break it once it’s frozen.

5. 100g Egg white
100g Caster sugar
10g Icing sugar
2-3 drops of granny smith apple flavoring

Whip egg white and caster sugar until ribbon stage, add icing sugar and flavoring at last.

Spread out on baking paper and dehydrate at 70 degrees for 24 hours. Blend it.

6. 100g Axia
150g Apple juice
60g Caster sugar
3.5g Agar
1 sheet bronze gelatine leaf, soaked in ice water
A jug of very cold oil
1 TBS Axia

Place a jug of oil in the freezer until it’s about to freeze.

Boil Axia,apple juice and sugar. Gradually add agar when it starts to boil, keep boiling for another 2 minutes. Add soaked galatine at last.

Cool the mixture down for 5 minutes and put it in a piping bag. Slowly pipe into the jug of oil.

Drain oil and rinse well with cold water. Mix with a tablespoon of Axia.

7. Pick elderflower and keep it on a damp cloth

8. 100g Egg white
100g Caster sugar
100g Melted butter
115g Plain flour
1/4 tsp Pistachio green colouring

Place all ingredients in a blender. Blend it well and spread over silicone tree mold.

Bake at 140 degrees no fan, no humid  for 8-10 mins

9. 3 x medium size green apple, diced in cubes
15g Apple mint
150g Lemon juice
150g Caster sugar
150g Axia
Pistachio green coloring ( or desirable green coloring)

Heat up lemon juice, caster sugar, and Axia in a pot then simmer it for 8-10 minutes. Cool down. Blend it with the rest of ingredients and pass it through a fine sieve.
